Cajun Palms Camping
This is my friend Janet, and her daughter Jamie and myself.

These are some friends of ours we like to camp with, Myriya and Jason.

These two precious kids are my grandkids, Kylie and gavin.
I woke up this morning thinking about summer. My husband, Dean, and I love the outdoors.We are lookihng forward to camping and motorcycle riding. We have a fifth wheel Colorado Travel Trailer that we bought about three years ago. We started out with a Star Stream Travel trailer and had the opportunity to swap campers with some friends of ours. In May we are going to Taledago, Alabama to the Nascar Races. This will be our first long trip pulling the camper and our first trip to see the races. We are so excited! Our favorite place to camp is in Henderson, Louisiana at a RV Resort. Mainly we like it because of the pool area and they have plenty activities planned all weekend. They have bands come and play, a theater for the kids, putt-putt golf, fishing ponds, volleyball, playground area, and a great crowd of cajun people that as very friendly and fun.

I believe we all get caught up in being so busy that we don't stop to count our blessings. I try to be thankful daily for what I have in life. I am blessed to have a job that I love, a husband that I enjoy spending time with ( usually enjoy it), a family that is supportive and always has my back, grandchildren that I adore, my health, and also I have a heart to try and help people feel good about themselves.
Healthy Recipes
Most of the time I try to eat healthy. Today I went to the store by myself and was able to read labels and take my time without any distractions. I'm always on the right track until my husband goes with me and wants all the fattening snacks. He has been pretty good this week not complaining about the foods I prepared. I made Chicken Salad last night.
Curry
Chicken Salad
3
boneless/skinless chicken breasts
1/2 cup of
Mayo (NOT miracle whip)
2 teaspoons
Curry powder
1/4 cup of
finely chopped celery
1 cup of
grapes, halved
Directions:
Boil chicken
breasts, cool & cut into bite sized pieces
Combine mayo
& curry and add chicken bits
Stir it
up
Add the other
ingredients
Stir it up
again
Refridgerate
for at least 2 hours prior to consumption
Best paired
with crossaints
Enjoy!

Yum, it was a struggle though
because I have this ridculous notion that fruit should be eatten by itself and
not blended with things such as salad, but I have to admit that this salad would
not be the same with out the grapes!
